             Presentation of  « L’Esprit de La Fontaine », project begun in 2006 at Aniane.

 

Laurent Audiot, chef of the « Restaurant La Fontaine Gaillon » and « l’Ecaille de la Fontaine » in Paris,

Gérard Depardieu, winemaker-actor,

Laurent Vidal, winemaker at Mas Conscience in St Jean de Fos,

Jean-Philippe Servière and Philippe Salasc, winemakers at Grès Saint-Paul,

 

bought  a vineyard of 17 years old :

 

1,15 ha of Syrah

0,53 ha of Grenache

0,47 ha of Carignan

and 1,55 ha of wood and garrigues.

 

Appellation : AOC Coteaux du Languedoc : Terrasses du Larzac

 

Type of soil : Planted in terraces (clay-limestone and talus scree) on the best slopes of Aniane, east-west facing and protected by a wild and natural environment, the vineyard is farmed biodynamically.

 

Natural yeld : 18 hl/ha

 

Variety : Syrah 50% - Carignan 25% - Grenache 25%

 

Hand-picked harvest

 

Vinification: in open tapered vats (30hl). Maceration for one month. Light daily punching of the cap

 

Ageing In tapered 20hl vats for 18 months

 

Tapered vats in French oak were made especially for this wine at Courberon in Burgundy.

 

Tasting: a shiny purple colour with violet tints, the Coteaux du Languedoc Terrasses du Larzac "L'Esprit de la Fontaine 2006" releases a prodigious nose of candied cherry, raspberry and blueberry, with spicy (white pepper), scrubland notes (rosemary and thyme) and a hint of vanilla. A very mature wine, with good body and a satin texture, it is powerful whilst remaining feminine and elegant.
