Microclimate: cool microclimate at an altitude of 50 meters
Vinification : -Complete de-stemming, direct pressing followed by a racking of the must at low temperature (6°C) during 24 hours. - Slow fermentation at low temperature (15°C) during 3 weeks.
Ageing : Maturing in stainless steel tank with a stirring of the fine lees each month
Tasting A wine with complex and intense aromas. Notes of white peach, marshmallow, citrus and a hint of aniseed. Fresh in the mouth, full with a mineral and smoky finish. Ideal as an apéritif and with asparagus, salads, cold buffets, exotic cuisine and sushi.
