Vinification :             

- the grapes are destemmed and crushed

- the maceration lasts 4 weeks in concrete vats

- extraction by manual punching, delestage and pumping

                                     over

- fermentation temperature : 26 à 30°C

- blending : free run wine+ press wine

-varietals blending : during the winter

 

Ageing :     in concrete vats

 

Tasting A fruity wine with notes of spice and scrubland (buds of blackcurrant, thyme, rosemary...). In the mouth it is fresh, creamy, all generously coated by smooth tanins. This wine is very elegant thanks to its finesse and excellent balance.
