Vinification : - the grapes are destemmed and crushed - the maceration lasts 8 weeks in concrete vats - fermenation with natural yeasts (endogenous) - extraction by manual punching and pumping over - fermentation temperature : 26 à 30°C - blending : free run wine+ press wine
Ageing : 100% in concrete vats during 24 months
Tasting: The nose has powerful aromatic intensity: black berries, leather, liquorice and hints of Eastern spices and roasting. A voluptuous palate with a dense structure and very fine, softened tannins. An explosion of flavours: cherry, gooseberry, undergrowth, sap and black pepper. The finish is full and lingering. A perfect expression of the soil. |
