Grès saint offers a large range of wines thanks to his diversity vines and methods of vinification:

 

For the white varieties, Muscat Petit grain is vinified to obtain 3 types of wines:

Dry Muscat : vinified at low temperature 16°c, where allthe natural sugars are turned into alcohol.

Sweet Muscat: vinified at low temperatue 14°c where one of the natural sugars is not turned into alcohol (residual sugars circa 60 grams)

Vin Doux Naturel (fortified wine): vinified at low temperature then mutage (alcohol addition) to obtain a rate of 120 grams of natural sugar.

 

For the red varieties, each variety is vinified when it has reached optimum maturity.

The grapes are destemmed and crushed.

The maceration lasts from 3 to 7 weeks.

Extraction by punching, delestage and pumping over.

Wines are matured in vats and in barrels.
