Know-how
For the white varieties, Muscat Petit Grain is vinified to obtain 4 types of wines :
- Dry Muscat : Vinified at low temperature (14°), where all the natural sugars are turned into alcohol.
- Sweet Muscat : Vinified at low temperature (14°), where one part of the natural sugars is not turned into alcohol (residual sugarscirca 60 grams).
- Vin Doux Naturel (fortified wine) : Vinified at low temperature (14°) then mutage (alcohol addition) to obtain a rate of 125 grams of natural sugar.
- Fizzy Muscat : Vinified at low temperature (14°), where one part of the natural sugars is not turned into alcohol (residual sugarscirca 30 grams).
For the red varieties, each variety is vinified when it has reached optimum maturity. The grapes are destemmed and crushed. The maceration lasts from 3 to 7 weeks in concrete vats at a temperature between 27°C and 30°C, extraction by punching, delestage and pumping over, pressing through horizontal press, then wines are matured in concrete.
